Carrot Raisin Muffins

Description

A little spicy, a little sweet, a little bit of nutritious fruit and vegetable tucked into a yummy breakfast treat!

Ingredients

1 3⁄4 c
Cooqi Pancake Mix
1⁄4 c
almond meal (if nut-free, substitute Teff or Amaranth flour, or more Pancake Mix)
1⁄4 c
rice bran
2 T
ground flax
2 t
cinnamon
1 1⁄2 t
nutmeg
1 c
grated carrots
1⁄2 c
safflower or canola oil
1⁄3 c
agave
2  
eggs
1 t
vanilla
1⁄2 c
raisins

Instructions

Preheat oven to 350. Spray or line muffin pans. Mix dry ingredients in a bowl. Combine carrot, oil, agave, eggs, and vanilla in mixer on low until blended. Mix in dry ingredients on low until smooth. Mix in raisins. Scoop batter into muffin pans and bake for 20-22 minutes, until inserted toothpick comes out clean.
