At our house, we love these handy little pocket breads for just about everything. Easy to make, keep a batch on hand in the freezer for quick sandwiches, english-muffin-like toast, or mini-pizzas.



Follow Cooqi Pizza + Pita Mix bag instructions for pizza crust dough. Scoop dough into ¼ -c. mounds, spaced evenly on oil-sprayed cookie sheet. Gently bang pan on counter to evenly flatten and shape pitas. Let rise for 10 minutes, and bake for 20 minutes at 400. Remove from pan to cool on a rack, slice in half, and enjoy or bag and freeze.
